However, it also means that on extremely lazy or dreary days, I’m not always looking my finest during the wee hours of the morning, and admittedly, I also find myself reaching for unhealthy lunch and snack options just for the sake of saving time.

Versatility with Layered Basics
I’m definitely not the type of working gal spotted with a corporate suit during my 9-5. Our office is super cool yet professional, therefore I’m often looking for pieces that have a relaxed fit and casual style. Most of you already know that I’m a big fan of Joe Fresh. I particularly adore the variety of basics that they offer, making it super simple for me to find layering items that I can wear both to the office and to events in the evening.

Simple Yet Delicious Layered Salads to Go
President’s Choice® shared some fabulous tips to speed up prep time for work day lunches! I love using mason jars to store pantry items but hadn’t thought of using them as containers for salads! These layered salads to go can be prepared a few at a time and stored in the fridge for several days – saving time, money, and unwanted calories!
Recipe: Kale Slaw Layered Salad
Provided by PC® and serves 3, ready in under 15 minutes
- 1 shallot, minced
- ¼ cup cider vinegar
- ¼ cup PC Blue Menu Celeb 100% Canola and Mid-Oleic Sunflower Oil Blend
- 2 tbsp. PC Dijon Prepared Mustard
- ½ tsp. PC Manuka Honey
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 2 cups PC Kale slaw bag
- 2 carrots, sliced (or buy match stick carrots, ready to go)
- 2 green onions, diced
- 3 tbsp dried cranberries
- 6 tbsp natural sliced almonds, toasted (I substituted with a handful of PC raw almonds)
- 1 Royal Gala apple, cored, diced, skin on
- 2 cups diced cooked chicken (I shredded a leftover rotisserie chicken)
- Add together shallot, vinegar, oil, mustard, honey, salt and pepper in small jar, and shake to combine dressing.
- Into three 750 ml mason jars, divide up ingredients starting with:
- 2 tbsp dressing
- Kale slaw
- Green onions
- And top with almonds, cranberries, and just about anything you like
- Cover and refrigerate (lasts up to 3 days in the fridge)
Satisfy Midday Sweet Cravings
Ever experience that mid-afternoon slum? When 2-3 p.m. comes rolling along, I find myself exhausted and looking for sweets to re-energize. A fresh approach to satisfy that midday craving instead of grabbing a handful of candy or a chocolate bar is preparing healthy snacks with fresh fruits and good fats.
The PC® Ricotta Whey Cheese is nutritious and tasty, and due to its thick texture, it is also super satisfying. Inspired by the layered salads to go, I’ve started to build mini ricotta dessert jars with simple and nourishing ingredients!
These bite size snacks are perfect tossed in the purse or backpack!
What You Will Need:
- Line bottom of jar with fresh berries
- Add 1/3 cup of ricotta cheese
- Top with more berries and 1 tbsp of honey
- Cover and refrigerate
