The BEST Holiday Cookies {Recipe Included}

Greetings! Just a day away from Christmas, I hope you’ve started to enjoy your holidays with your family and friends. I’m not too much of a baker. However, I will make an extra effort to bake these amazing Oatmeal, Cranberry, Chocolate Chip, Skor Bits Cookies every year during Christmas. They always turn out the same and they stay chewy and delicious for days! A friend of mine introduced this recipe to me years ago, and I’ve stuck with it ever since.

The joy of baking cookies is to share them! This year, I decided to wrap them in parchment paper, burlap, and a few extras Christmas-y decorations, and they’re all ready to go to family and friends.

I really hope you’ll give this recipe a try!

RECIPE:

Ingredients:
1 1/2 cups all-purpose flour
1 tsp baking soda
1 cup unsalted butter, soften
3/4 cup packed light brown sugar
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups oats
1 cup dried cranberries
1 cup chocolate chips
1 cup toffee pieces (Skor bits)

Directions:

1. Preheat oven to 350 degrees F
2. In a medium bowl, sift together flour and baking soda.
3. In a large bowl, cream the butter, both sugars at medium speed until light and fluffy (2-3 mins). Add the egg and vanilla; mix on high to combine.
Add flour mixture to the egg mixture and mix on low sped until well combined.
Add oats, cranberries, chocolate and toffee pieces; mix to combine after each addition.
4. Spoon tablespoons of dough on the baking sheet (spaced about 2 inches apart)
5. Bake until golden brown, 12 -14 mins., transfer to wire rack to cool.

Alternate way to prepare dough:

Mix as stated above, but split dough into thirds, roll and wrap in plastic wrap.
Refrigerate dough for a couple of hours. Cut dough into 1/2 inch thick circles and place on lined cookie sheets. Bake 12-14 mins or until golden brown.

Variation:

Whatever chocolate chips you want to use as in white chocolate, semi-sweet or milk
